Dough
240 g DAISY Cake Flour
240 g CONTINENTAL All-Purpose Flour
5 g Instant Yeast
5 g Sugar
5 g Salt
360 ml Water, warm
Filling:
15 ml Cooking Oil
15 ml Sesame Oil
5 g Garlic, chopped
10 g Onion, chopped
5 g Ginger, chopped
100 g Straw Mushrooms, chopped
200 g Chicken Breast, minced
200 g Spinach leaves
100 g Cashew Nuts, chopped
60 g Hoisin Sauce
15 ml Sweet Soy Sauce
Dough Preparation
1. Mix DAISY Cake Flour, CONTINENTAL All-Purpose Flour, instant yeast, sugar and salt.
2. Make a well in the center.
3. Pour in warm water into the flour mixture.
4. Mix until a rough dough is obtained. Knead onto a floured surface until smooth.
5. Return to the bowl and cover with damp cloth.
6. Let it stand in a warm place for about an hour or until size doubles.
7. Punch down and rest for 30 minutes.
8. Knead and shape dough in 50g oval shape.
9. Proof for 30 minutes.
10. Place onto a pre-cut wax paper and steam for 10-15 minutes.
11. Let cool then cut in half to form a sandwich.
12. Place filling and serve.
Filling preparation:
1. Put cooking oil and sesame oil onto heated pan
2. Suate garlic, onions, ginger, straw mushrooms, chicken breast, spinach and cashew nuts in low heat. Cook for 5 minutes.
3. Add hoisin and sweet soy sauce. Simmer for 10 more minutes or until the sauce thickens.
4. Drain and let cool.
