Durian Streusel Bars

Grown in Mindanao, the durian is an exotic fruit. Enjoyment of eating is an acquired taste. In baking, it is best to use durian preserves to give character and disctinctive taste. Discover the novel ways of using durian in mouth-watering baked products that could lead you to baking glory.
Ingredients:
Cake Base
225g Butter
400g Sugar
2g Salt
3g Vanilla
200g Eggs
2 cups Water
50g Milk Powder
600g WHITE ROSE Soft Flour
7g Baking Powder
9g Baking Soda
125g Durian Preserves
Streusel
250g CONTINENTAL All-Purpose Flour
170g Sugar
2g Cinnamon
150g Butter, cubed
Procedure:
Cake Base
1. In a mixing bowl, cream butter, sugar, salt and vanilla till light, about 4 - 5 minutes.
2. Add eggs one at a time, beating well after each addition.
3. In another bowl, combine milk powder, WHITE ROSE Soft Flour, baking powder and baking
soda.
4. Alternately blend in dry ingredients with the water, beginning and ending with the dry
ingredients.
Streusel
1. In a mixing bowl, combine all purpose flour, sugar, cinnamon and butter.
2. Mix till well blended and the texture is crumbly.
3. Set aside.
Assembly
1. Spread cake base in a greased and lined 9” x 13” x 2” pan.
2. Drop durian preserves in dollops then swirl.
3. Sprinkle streusel over the batter, distributing evenly.
4. Bake at 375°F till top is golden and toothpick inserted in the center comes out clean, about 35
- 45 minutes.
5. Cool for 10 - 15 minutes before unmolding.
